Carb Counter's Potato Salad
Ingredients:
- 1 inner pack(s) Instant Mashers- Dixie Carb Counters
- 2/3 cup(s) Boiling water
- 2 Large or jumbo hard boiled eggs, chopped
- 2 Tablespoon(s) Chopped onion, green or red
- 1 Stalk of celery, chopped
- 1/2 cup(s) – Walden Farms Honey Mustard or Plain Mayonnaise
- Salt and pepper to taste (optional)
A great way to enjoy homemade potato salad the delicious Carb Counter's way.Combine the mashers and the boiling water in a medium sized bowl. Fluff LIGHTLY with a fork just until mashers are wet but still lumpy. Chill in freezer for 10 minutes. Mix in lightly the remaining ingredients, salt and pepper to taste if desired, and chill in fridge for an hour.Makes 5 servings at 4 net carbs per serving.Optional: add 2 or 3 Tablespoons sugar-free sweet pickle juice
